Although this chicken dish is fit for a king, you’d never guess how simple the recipe is! It uses grilled chicken, fresh portobello mushrooms and the secret ingredient: canned mushroom soup!

The result is a creamy, juicy meat dish that can be paired with anything from pasta to potatoes.

Method


  1. Grill the Chicken

    Pat the chicken breasts dry with a paper towel.

    Heat your grill or skillet to medium high. Grill the chicken breasts for 10 minutes, flipping halfway through.

  2. Make the Condensed Soup

    Mix the can of condensed soup with water in a small pot. Heat the pot over medium heat until the soup and water combine.

    Set aside.

  3. Sauté the Mushrooms

    Heat a saucepan over medium high heat.

    Add vegetable oil and chopped mushrooms. Cook for 1-2 minutes until they begin to brown.

    Add 1 tbsp of flour and toss with the sautéed portobello mushrooms. Don’t let the flour brown, or it will become bitter.

  4. Add Soup Mix

    Slowly pour the mushroom soup mixture into the pan with the mushrooms. Stir while the mixture comes to a low boil.

  5. Season the Sauce

    Add white pepper, salt, sugar and garlic powder to the sauce. Let the spices cook with the sauce for 2-3 minutes.

  6. Melt Cheese on the Chicken

    While your sauce is simmering, set your oven to 400°F.

    Place your chicken breasts on a parchment paper lined baking tray. Sprinkle shredded Monterey Jack cheese on top of each chicken breast.

    Heat chicken in the oven until the cheese melts. About 1 minute.

  7. Cover Chicken with Portobello Mushroom Sauce

    Remove the chicken from the oven and plate. Ladle the mushroom sauce on top of the chicken.

  8. Garnish and Serve!

    Garnish your chicken breasts with freshly grated parmesan cheese, and freshly chopped parsley. Serve and enjoy!


Ingredient Substitutions

Beef

We know chicken and mushroom go together, but beef and mushroom is another classic pairing. They’re most famously brought together in delicious dishes like mushroom beef stroganoff.

Since they pair so nicely, feel free to swap out the chicken for a juicy steak in this recipe. The beef is fattier than chicken, so it will add more flavor and richness to the sauce!

Fish (Salmon/Sea Bass)

If you’re looking for something leaner than chicken, try using fish like salmon or sea bass. These fish are low in fat and can be grilled the same as chicken.

Other firm fish with a steak-like texture will work too, such as halibut or cod.

Cheese

If you can’t find Monterey Jack, you can substitute it for similar cheeses like Colby or white cheddar. Cheddar is more sharp tasting, whereas Colby cheese has more of a mild flavor.

Storing And Reheating Instructions
